
When fully mature, Black Winter Truffles have a rich flavour and aroma, with hints of earthiness, hazelnuts, chocolate, and vanilla. When past their best; these Truffles tend to turn soft and spongy after around 2 weeks.
Harvested in Umbria, central Italy, the black Winter truffle (Tuber Uncinatum Chatin) is a delicacy best served raw. Shave or slice over pasta, rice, egg or potato dishes. Picking season is from October to November.
